(4 servings) 2 cups instant brown rice 1 lb. Boneless skinless chicken breasts, cut into strips 1 pkg. (16 oz.) frozen stir-fry vegetables, thawed ½ cup Light Italian Dressing 1) Cook rice as directed on package. 2) Heat large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; stir-fry 2-3 minutes or until chicken is no longer pink. 3) Add vegetables & dressing; stir-fry 3-4 minutes or until chicken is cooked through & vegetables are crisp-tender. 4) Serve over rice.
