St. John's Healthy Cooking- Soy Chili & Fruit with Cool Whip

(Kraft Foods)
2 medium bell peppers (red, yellow, or green), coarsely chopped
1 medium onion, chopped (about ½ cup)
2 cloves garlic, minced
2 tsp. oil
1 can (15 oz.) black beans, rinsed, drained
1 can (15 oz.) chili beans in sauce
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes
1 pkg. (12 oz) frozen BOCA Meatless Ground Burger
1 can (4 oz) chopped green chilies, drained
1 Tbsp. chili powder
½ tsp. ground cumin
Cook peppers, onion & garlic in oil in large saucepan on medium-high heat 2 minutes, stirring frequently. Stir in ground burger; cook 2 minutes, stirring occasionally.
Add remaining ingredients. Bring to boil. Reduce heat to medium-low; simmer 30 minutes, stirring occasionally.
As prepared on Good Morning Four States: No oil. Also used canned diced tomatoes with green chilies. Put all ingredients into crock pot and cook on high for 4-6 hours or all day on low.
Makes 8 cups.

Mix together & divide into 4 servings, about ½ cup each.
