Shannon & Alan Cooking Challenge Pt. 2- November 18, 2011

Pumpkin Muffins

3 cups flour
1 Tablespoon pumpkin pie spice
2 1/2 teaspoons baking soda
1 teaspoon baking powder
3/4 teaspoon salt
1 1/2 cup sugar
3/4 cup oil
1/2 cup buttermilk
1 can pumpkin
4 eggs

Mix together the dry ingredients in one bowl and the sugar with the wet ingredients in another.  Fold together.

Bake at 350 degrees for 25-30 minutes.  Makes about 30 muffins.  These can be served plain, but we used the cream cheese frosting recipe listed below.

Frosting Ingredients

4 oz softened cream cheese
1/2 tsp vanilla
1 tbsp canned pumpkin
1/2 cup powdered sugar

Mix these ingredients in a bowl until smooth and serve on muffins.
