Orzo Pasta with Feta and Tomatoes
1 cup of uncooked orzo pasta
1 tsp extra-virgin olive oil
1 medium tomato, chopped (1 cup)
1/2 cup of crumbled feta cheese
2 Tsp. finely chopped fresh parsley
1.2 tsp. grated lemon peel
2 tsp. fresh lemon juice
salt and pepper to taste.
Prepare pasta according to package directions. Drain. In a medium mixing bowl or serving bowl, combine pasta and oil. Toss to coat. Add remaining ingredients toss to combine. Serve warm. Makes 4 to 6 serving.
Frozen Parfait
1 large bottle of V8 Slash
1 container of light whipped topping.
Pour the V8 Slash in to freezer safe container. Place in Freeze and scrape with a fork every 30 to 60 mins until completely frozen (but a grainy look). Assemble in tall glasses with alternative frozen juice and light whipped topping. Topped of with any type of fruit.
