1/2 cup walnut pieces
3/4 cup pre-washed basil leaves
1 Tbsp grated parmesan
1 tsp freshly chopped garlic
1/2 cup olive oil
salt & pepper to taste
2 6-ounce boneless chicken breasts
2 cups pre-cooked penne pasta
1/2 cup diced tomato
1 tsp grated parmesan
1 tsp olive oil
1) Toast walnuts at 350 degrees for 8 minutes or until brown. Place in blender or food processor walnuts, basil, 1 Tbsp. of parmesan, 1/2 cup olive oil, garlic, salt and pepper. Process until you have a smooth paste.
2) Take brush and lightly coat the chicken with pesto. Place on pre-heated grill and cook for 6 minutes. Turn over and cook for additional 4 minutes (until done).
3) Place a skillet over moderate heat, add pasta and remaining pesto. Toss well.
4) Plate the hot pasta mixture. Slice the chicken breast and fan over top. Drizzle olive oil and cheese over it and garnish with tomato.
