Shannon & Alan Cooking Challenge- Pumpkin Dessert Roll

3 eggs
1C sugar
2/3C pumpkin
1tsp lemon juice
3/4C flour
1tsp baking powder
2tsp cinnamon
1tsp ground ginger
1/2tsp nutmeg
1/2tsp salt
Filling:
1C powdered sugar
6oz cream cheese
4TBSP margarine
1/2 tsp vanilla
Beat eggs on high for 5min. Gradually add sugar. Stir in pumpkin and lemon. Fold dry ingredients into pumpkin mixture. Spread on greased and floured cookie sheet (I use a small sheet). Bake at 375 for 15min. Turn onto a tea towel sprinkled with lots of powdered sugar. Starting at the short end, roll both the tea towel and cake together. Cool. (you can stick it in the fridge or freezer to save time) Filling: Beat all until smooth. Unroll cake. Spread filling over cake. Reroll (without the towel). Chill.
