Chef Jose- Gazpacho Shrimp Cocktail

Raw shrimp
Cajun seasoning
Cucumber, peeled and chopped very fine
Red onion, chopped
Fresh roma tomatoes or diced can tomatoes
Tomato juice or V-8
Olive oil
Minced garlic
Minced jalapenos
Salt
1) Bring water and cajun seasoning to a boil. Add raw shrimp and cook for only 2 minutes. Remove shrimp and chill with cold water and ice.
2) Combine remaining ingredients in bowl. Add shrimp.
3) Refrigerate for a few hours for better flavor.
4) Serve with toast points, salad or French bread.
