Caramelized Onion Bread
1/4 cup butter
2 onions, chopped
1-1/4 cup water
1 teaspoon honey
2 cups white bread flour
2 cups wheat bread flour
1-1/2 teaspoon salt
1/2 teaspoon ground black pepper
1-1/2 teaspoon easy-blend dried yeast
1. Melt butter in a frying pan and saute onions over low heat until golden. Remove from heat and let onions cool slightly. Place a sieve over bread machine pan, then tip the contents of the frying pan into it, so that the juices fall into the pan. Set onions aside to cool completely.
2. Add water and honey to bread pan. Reverse the order in which you add the wet and dry ingredients if necessary. Sprinkle over the flour, covering the liquid. Place the salt and pepper in separate corners. Make a shallow indent in the center of the flour; add the yeast.
3. Set the bread machine on dough setting; use basic raisin dough setting (if available). Press start. Add the onions when the machine beeps or in the last 5 minutes of kneading. Lightly flour a baking sheet.
4. When the cycle is finished, remove dough from bread pan and place on lightly floured surface.
5. Knock back (punch down) gently; shape into a ball. Place on the baking sheet and cover with oiled clear plastic wrap. Leave to rise about 45 minutes. Preheat over to 400F. Slash a 1/2 inch deep cross in the top of the loaf. Bake for 35-40 minutes. Cool on wire rack.
Oatmeal Bread
1-1/2 cup water
1 tablespoon canola oil
1-1/2 cup rolled oats
1/2 cup brown sugar
1 package of yeast
1 teaspoon sugar
1/4 cup water
1 cup whole wheat flour
2-1/4 cup white flour
Mix in a bowl water, oil, oats, brown sugar. Mix in a small bowl yeast, sugar, water per package direction. When ready add to oat mix. Mix with spoon, then with hands mix in flour. Knead and let rise until double for about 90 minutes. Punch down and turn into greased 9x5x5 loaf pan. Pat into rounded shape. Let rise until double (about 1 hour). Bake at 375F about 40 to 45 minutes until dark brown.
