Carol Parker: Guacamole for Cinco de Mayo

Carol Parker welcomes Dawn Anderson, who makes her own version of guacamole just in time for Cinco de Mayo.

Basic Guacamole:
2-4 Avocadoes, soft but not squishy
1-2 Jalapenos*, chopped finely
2 Roma tomatoes, chopped finely
Sweet onion, chopped finely
Squeeze fresh lime juice into the mixture. This will also keep it from discoloring and add the citrus it needs.
Sea salt to taste
Mix well.

Dawn's additions:
Cilantro, finely chopped
Garlic, finely chopped

You can also:
Substitue ginger juice for lime
Add a bit of chipotle for a smoky flavor

*Always tip your tongue on the end of your cut jalapeno so you will know the heat - or you can tell by the smell, if you know your peppers.
