Step 1: Crust
1 cup flour
1/2 cup butter (soften, not melted)
1/4 cup brown sugar
1/2 cup chopped pecans
Mix ingredients (by hand) until blended.
Press into 8 x 8 inch pan.
Bake 20 to 25 minutes at 350 degrees.
Place on cooling rack to cool...you want crust to be able to crumble!
Step 2: Strawberry mixture
1 egg white
2 tsp. lemon juice
1 cup sugar
large cool whip (12 oz. - but don`t use
all of it)
10 oz. frozen strawberries (thawed)
Combine egg white, lemon juice, and sugar - Beat until stiff.
Pour in the thawed strawberries and beat.
Fold in cool whip.
Step 3:
Crumble 2/3 of the crust into a 13 x 9 inch pan. Pat down crumbs enough to cover pan.
Add stawberry mixture. Sprinkle rest of crumbled crust on top of mixture. Freeze 4 to 5 hours.
It is now ready to eat...let thaw for just a little bit before digging in! Enjoy! Jennifer
