No-Bake Quick Chicken (Turkey) Tetrazzini

2 stalks celery, chopped
1 small onion, chopped
1 package (8 ounces) sliced mushrooms
4 ounces (1/2 of 8 ounce package) Neufchatel cheese, cut into cubes
2 teaspoons grated Parmesan cheese
2 cups chopped cooked chicken breast (can substitute turkey)
3 cups yolk-free, whole wheat egg noodles, cooked according to package directions, no salt
teaspoon salt (optional)
1/8 teaspoon black pepper
1. Heat skillet coated with cooking spray over high heat. Add celery, onion & mushrooms & cook 4-5 minutes or until mushrooms & onion are slightly tender; stirring occasionally.
2. Stir in broth, Neufchatel cheese & Parmesan cheese. Bring to a boil; simmer on low heat 7 minutes or until slightly thickened; stirring occasionally.
3. Stir in chicken, noodles, salt if desired & pepper; cook until heated through.
